Mezes Greek Tzatziki Recipe

1 ½ cups Greek yogurt
(For best results use whole yogurt)
1 tablespoon freshly chopped dill
¾ teaspoon salt
¼ cup olive oil
2 tablespoons canola oil
Pinch of white pepper
Peel cucumber then grate it using a cheese grater
Sprinkle salt on cucumber and wrap in cheesecloth
Set cheese cloth in a strainer and place in the fridge to strain liquid for 1 day.
Remove cucumber from cheesecloth, fold with other ingredients in a large bowl.
Remember, fresh ingredients and simple preparation is the key to great tasting Greek food.
